Today we rode from Orvieto to Spello, the jewel of Umbria. Along the way we stopped for porchetta sandwiches (panini) in Todi to tide us over until our dinner (cena) at La Bastiglia. Chef Marco spoiled us as always with his creative take on traditional Umbrian ingredients like rabbit, fava beans, fresh pork, and pappardelli with duck ragu, all enjoyed with Grechetto and Rosso di Montefalco. In the photo we pause with our antipasti of roasted rabbit with balsamic vinegar.
